Your tour guide will meet you in the hotel lobby as long as the hotel is within the Fourth Ring Road in Beijing. If your hotel is outside the Fourth Ring Road, or if you need to be picked up at the train station or airport, the guide can still meet you up, but there will be an additional charge.

Beijing-style hot pot (Beijing shuàn ròu) is a traditional hot pot dish from Beijing, known for its simplicity and freshness. Thinly sliced lamb or beef is quickly cooked by dipping it into a simmering pot of broth, usually made from water or a light broth base. The meat is then dipped into a variety of sauces, such as sesame sauce, soy sauce, and sometimes fermented tofu or chive flower sauce. The meal is often accompanied by vegetables, tofu, and noodles, which can also be cooked in the broth.

 

Unlike more complex hot pot styles, Beijing-style hot pot emphasizes the natural flavors of the ingredients without overpowering them with heavy spices. The dish is typically enjoyed in the colder months and is popular for its communal, social aspect.

As you go, you’ll also see Beijing’s traditional hutongs—narrow alleys and courtyards where locals still live today. Your tour finishes in the area where your guide departs. Your tour guide will assist you in taking a taxi to your hotel, but will not accompany you there.
